See the menu below.
To start
Seabass, scallops, cucumber emulsion
“When I was 16 years old, I went to work for Stuart McCloud at La Rive in
Hereford, which was the best restaurant in the country at the time. It was a real eye-opener for me and this was the first full dish I ever cooked."
Main
Duck Bolognese, bitter chocolate pasta
“My mum is a terrible cook (sorry mum!) and the only dish she ever cooked that was ever any good was Bolognese. So this is my take on it. It's also a nod to a dish I had for my 30th in New York; it was a Bolognese with veal dish, served with bitter chocolate pasta and it tasted amazing. You don't necessarily get the chocolate flavour, but the bitterness compliments the sweetness of the Bolognese really well."Dessert
Custard tart, spiced rhubarb sorbet
"This is my favourite thing to eat. My nan would make it growing up, and it was always so smooth and luxurious that it's stayed in my memory forever. The sharpness of the rhubarb and the spices compliment it perfectly and add a real balance to the dish."
